What is your favourite monster to fight? It has to be unaltered and be a fair fight for an noneoptimized party. Why is it your favourite?

Mine is the beholder. It takes soo much preparation and if the DMis smart and makes the terrain favour the beholder It is a fair fight as cr 13

I'm not one who goes around for book standard stuff myself. But I'd probably peg my favorite on the Yuki-Onna. It has a lot of ways it can play out, from the classical Succubus "A pretty girl likes you, it's a trap", to playing it as Helpful. It's not a huge heavy powerhouse monster, but it's got some decent tricks, particularly when it's found on it's home turf. It's one of those monsters you could just murder easily enough but you don't necessarily want to go around messing with it if you can help it.
