Does opposed roll as varied as trying to overcome spell resistance and concentration checks, or only skill checks?

You'd probably be better off giving the source. In general "opposed roll" means any roll against another roll, so the answer would be no.

An opposed roll is just that

When one target rolls against another its an opposed roll, so when youa re trying to hit a specific number like AC, Spell resistance, or any of the other myriad examples the competition domain granted power does not 'go off'

but any time 2 different individuals have to make indivual rolls in opposition to each other ( hence the name opposed roll) it does 'go off' so when you are using hide vs spot or bluff vs sense motive.

it mostly applies to skill checks but I am sure there would be some examples somewhere hidden in teh bloat that is 3rd ed stuff.

again unless both sides are rolling a dice it is not an opposed roll.

Grappling and overrun are examples of opposed checks in combat.

+1 on a opposed roll isn't big. Like most domain abilities (at least thats what I think this is) this isn't amazing but its helpful. Opposed rolls don't happen as often as other rolls though.

All things being equal it would make it about 5% more effective.
