The Mystic Fire Knight (http://www.wizards.com/default.asp?x=dnd/iw/20051104a) Paladin ACF improves a Paladin's spellcasting ability, though not to the same degree that Mystic Ranger improves a Ranger's spellcasting.

Do note that it loses you Turn Undead, which is a fairly hefty price.

The similar power bump for Paladins comes from the Battle Blessing feat, which makes many more of your spells into swift actions, so they don't cut into your face-smashing time.

The Illumian race can potentially boost both CL and bonus spells per day.

Alternatively, using the Prestige Paladin on a Cleric base can net you a similar effect to Mystic Ranger.

If you go Cleric -> Church Inquisitor, you get the basics -Almost-full BAB, Detect Evil, Aura of Good, plus Cleric fullcasting. Technically, Clerics are supposed to have codes of conduct anyway, so you could just slap the Paladin code on any LG Cleric no problem.

Not exactly a Paladin variant, but an illumian paladin/one level of cleric/fist of raziel/sacred exorcist makes for one mean tank, plus all the smite goodness you can get, and the spellcasting of the cleric.
