ITT: A single feat that makes 1HD opponents annoying and/or deadly. Something you would stick on a kobolds or goblins to replace original feats.

Destruction Retribution. It only works for crafted undead, but when they are destroyed they blow up for 1d6 + 1d6/additional 2 HD. Can definitely add up if a melee-oriented party is fighting dozens or hundreds of commoner zombies or similar.

Martial Study (Crusader's Strike). 4 or 5 points of healing for you or an ally tacked on to an existing attack does surprisingly well for keeping mooks alive at low levels.

Dragonfire Inspiration. A kobold bard 1 with DFI and the web enhancement that gives it a claw/claw/bite routine is making three attacks per round with +1d6 fire damage on each. A kobold bard 3 with DFI and Song of Heart, plus Inspirational Boost as a spell known, is making those three attacks with +3d6 fire damage on each. Plus it boosts the damage of all the other mooks as well. Quite nasty, and it puts rogues to shame at low levels.

Quick Draw + alchemical items or nets. Being able to quick draw a tanglefoot bag, net, smokestick or the like for a quick debuff is pretty great at low levels.

You are correct however destructive Retribution isn't a feat taken by the disposable undead but rather one taken by their creater, also its prerequisite corpse crafter gives them a few more hp and a stat bump.

Shape Soulmeld. There are three great options here. Soulspark Familiar, Dissolving Spittle, and Mantle of Fire.

Soulspark familiar has a ranged touch attack of +5 for 1d4+1 damage. That is pretty effective at dealing small amounts of damage to high AC opponents. Furthermore, the creature creating the soulspark has perfect sniping in that they need not have line of sight and can reform the soulspark if it is killed. This gets really annoying really fast.

Dissolving spittle can deal 1d6 acid damage as a touch attack. If you have essentia (say because you are an azurin) you can boost that damage to 2d6. With two points of essentia and another feat (expanded soulmeld capacity) the cap goes up to 3d6 acid damage on a ranged touch attack. That's pretty decent damage.

Mantle of fire runs the same concept as dissolving spittle for making it useful, but instead of relying on touch attacks, deals damage if the creature is damaged in melee. That gets really annoying really fast for melee PCs, and makes casters even stronger. Don't say I didn't warn you, but if you want to force casters to blow their AoE spells and direct damage spells early, a couple encounters with mooks like this help a lot.

I believe there are one or two ways to grant them bonus feats. Not sure if those cover EWP though.
