So I know where the book describes attacking objects, but my players and I need a quick clarification. When attacking an object, I can make a routine check or roll and, if I hit on the roll, deal critical damage. Question is, though, what am I rolling against? What is an object's Dodge or Parry? Also, if I'm doing a Smash attack, does the automatic critical count there, too? Or is that only for unattended objects?

You are rolling against Difficulty 10 if you don't attack as a routine check, as explained under the Finishing Attack maneuver. Since you can make Finishing Attacks only on defenseless targets, and the target of a Smash action isn't defenseless, you can't get the critical strike bonus unless you actually roll a critical strike.
