The one trying to nuzzle Elan to death looks like a Barbed Devil (Hamatula), which is appropriately a Lawful Evil creature (and seems pretty damn badass (http://www.d20srd.org/srd/monsters/devil.htm) by the d20 hypertext)

But what the heck is that hell-lobster-that Z summoned?

Does that mean that Z is neutral evil? Or can he summon a planar ally outside his alignment?

Arcane casters can summon/call creatures of any alignment, IIRC. But the Giant did recently confirm Z as Neutral Evil.

Z is a Wizard, so he is casting Planar Binding rather than Planar Ally. His options are not limited by his alignment.
