So I'm looking into starting up some kind of profitable business for my character probably in the crafting line. Basically I plan on hiring a skilled laborer of the related item to be crafted and then unskilled laborers to assist him in crafting. My question is how many people would it be reasonable to expect to assist on certain things such as a boat, house or even weapon/armor for example? Because realistically I can't hire 1,000 people to work on a set of mithral full plate.

A house or a boat or a similar object you could resonantly hire several hundred people, and have them work shifts to avoid fatigue and keep moral high. For a suit of armor or a weapon maybe five or ten people based on the item. For a sword five people could work, but for a suit of battle plate ten or twelve would work better.

So yeah even your basic sword had half a dozen people involved in its construction.
