Pathfinder Encounter Design Help

I, at some point, learned how to roughly do combat for D&D but am just beginning on Pathfinder/3.5 and am starting a campaign to better learn the system.

My party consists of three level 1's. They will be given some heal pots and a resurrection thingie or two. I don't want the encounter to last too long, but still be fun and challenging.

I was looking through some of the pathfinder beastiaries and couldn't find much on things for some level 1's to fight.

Where can I find some templates to use for such creatures?

(Idea is to have one main spell-casting creature, and lots of little ones.)

This is a LINK (http://www.d20pfsrd.com/bestiary/bestiary-hub/monsters-by-cr#TOC-CR1-) to the beastary for pathfinder, look at CR1 or lower creatures, they should all work well in small numbers.

for a single spell caster grab a few CR 1/2 or 1/3 and a single CR 1 spellcaster, or at least look at the general stats for a CR 1 creature and add spellcasting to it.
