I'm looking for some interesting monsters for Pathfinder, CR roughly 10-12. By interesting, I mean have some out-of-the-ordinary mechanics that require the players to think and be creative in their application.

Do you mean homebrew or from a published source? Either one? And by force the player's to be creative, do you mean that you want them to choose otherwise neglected options for their builds or that you want them to use their current abilities in new ways? Both?

Homebrew or published are both viable options, but the homebrew needs to be easily accessible and well-made.

For the creative part, either one is viable.

Mainly, I'm looking for monsters that are more than damage dice and hitpoints, and lead to interesting fights.

If you are OK with 3rd party content, a Red Jester (http://www.d20pfsrd.com/bestiary/monster-listings/undead/red-jester) will ruin anyone's day, even while being below the CR you're considering. Any party who realizes that the thing can throw Deck of Many Things (http://www.d20pfsrd.com/magic-items/artifacts/minor-artifacts/deck-of-many-things) cards at them is gonna be terrified. Characters and players both.

Also your Pony Arvak is way cool.

I like lightning elementals (http://www.d20pfsrd.com/bestiary/monster-listings/outsiders/elemental/elemental-lightning) as well. Omox demon (https://sites.google.com/site/pathfinderogc/bestiary/monster-listings/outsiders/demon/demon-omox) is pretty cool as well.

But for truly memorable encounters, I think terrain matters more than monsters, really. A bunch of not-so-dangerous monsters when you're fighting your way out of a sinking ship or a collapsing cave is awesome is pretty cool.
