There's an hour/level spell in spell compendium for it: Elemental Body, page 78, Sor/Wiz 7, personal spell.

Polymorph Any Object can also do it, of course.

Elemental Archon gives you any of the elemental subtypes.

Elemental Savant doesn't say that it does, but the text "that share her
elemental subtype (air, earth, fire, or water)" seems to suggest that it does in fact gain a subtype. Most DMs would likely rule no, though.

That doesn't work. Oddly enough, the Elemental Racial Variants don't have the appropriate elemental subtypes.

I actually quoted the Elemental Racial Variants rules that say that, though Alter Self also wouldn't give you the Air or Earth subtype even if the Elemental Racial Variants had them.

Also Primal Form SpC Druid 3 or Sor/Wiz 3; only 1 min / level though. It's also mildly dysfunctional in that it doesn't spell out several details which the DM has to fill in.

There are also a large number of races and a few templates one might inherit.

I think that what I said might have meant the opposite of what I intended to say. What I meant was, even if the thing you were saying about alter self weren't true, using alter self to turn into the elemental racial variants still wouldn't work, because they just don't grant the subtype. In other words, more addendum than argument.
