According to the spell description of Dispel Magic,
"If the object that you target is a magic item, you make a dispel check against the item’s caster level."

My question is (hopefully) straight-forward: Does this mean the DC of the dispel check [1d20 + CL] is the unmodified caster level of the magic item being targeted?

The DC to beat is 11 + caster level. If the target is a spell, you use the spell's caster level. If it's an item, use the item's caster level.
