I am looking for weapons that use dexterity to attack, but don't require the weapon finesse feat. I know bows/ cross bows.

Any other ideas?

All ranged weapons are like that. Why single out bows and crossbows?

Light Feycraft weapons (DMGII) give you the equivalent of Weapon Finesse even if you don't have the feat.

Feycraft sounds like it has potential.

I singled out bows and crossbows because I wasn't thinking lol.

Are there any melee weapons that can use dex w/o weapon finesse and that are also simple?

A pyrokineticist's (http://http://www.d20srd.org/srd/psionic/prestigeClasses/pyrokineticist.htm) Fire Lash ability would qualify. It's a ranged touch attack that can be modified by any feat that you could apply to a whip.

1 level of swashbuckler gives weapon finesse, which may answer your root question of lacking feat slots or feat qualification.
