I mean, you're not going to be playing as the Deities, so you don't really have to worry about balance. They're really all about flavor... find an interesting concept, give it every domain that makes sense, pick the weapon that makes sense. Rinse, repeat. If you get done and realize that one of the deities has way more or way less domains or whatever, then adjust them.
Probably one of the easiest bits of DM'ing. Grab a mythology/theology textbook if you need a hand. Or take a look at the game Scion; impressive rundowns on 10 different pantheons (9 plus atlantean) with 6-12 gods in each.
