So, I have seen a few summonable, and undead creations, but I am wondering, if I don't want to use humans, or everyday creatures.

How does one suggest ,per level ; useable cat like creatures ?

I am curious whether they keep their pounce and rake attacks.

Special Attacks: A skeleton retains none of the base creature’s special attacks.
Special Qualities: A skeleton loses most special qualities of the base creature. It retains any extraordinary special qualities that improve its melee or ranged attacks. A skeleton gains the following special qualities.

Special Attacks: Pounce, improved grab, rake 1d4+2
Special Qualities: Low-light vision, scent

If pounce and grab were considered SQ instead of SA, they would retain them :)

Well awaken undead will be incredibly useful for this as it gives back (Ex) abilities.

Planar Binding + Fiendish Lions, Tigers, Dire Lions and Dire Tigers (And Hellcats) would also be useful in acquiring cat like minions.

Feline and cat-themed creatures...

Catfolk (PC race, RotW)
Tressym (Animal/Familiar, FRCS p.309)
Rakshasa (Outisder, CR 10, MM1 p.211)
Jarilith (Demon, CR 13, MM2 p.60)
Sphinx, MM1 p.232

 Yes, yes it is! It should be noted that Tibbits qualify for such feats.

Wouldn't hurt to consider classes like Druid, Ranger or Wild Bard (http://www.d20srd.org/srd/variant/classes/variantCharacterClasses.htm#bard) for a base class. Certain PrCs would also be thematically appropriate such as Animal Lord and Beastmaster, both from Complete Adventurer.

Spell Thematics (PGtF) feat will make your spells look like cats.
