[PF] Using Stealth while mounted?

I haven't see any rules about this. What happens if a mounted character wants to use stealth? Do they both roll with their respective modifiers and you take the lower? only the mount rolls with a penalty for carrying a rider? Does ride come into play? does handle animal? What if the mount is intelligent?

I would say the mount rolls, with no penalty as long as it's not encumbered. Most animals would have to either know a sneak trick, or the rider could 'push' it with handle animal as a standard action, or a move for an animal companion.

I'd say it's just like having multiple characters roll—each rolls with his own bonuses vs. Perception of the observer(s).

I'd say both roll and you take the worse result. Because the riders still have to hide themselves.
