What is a good class to Gestalt with binder?
How the heck does it work?

Also we have access to the feat Lost Tradition from BaB (Bastards and Bloodlines) which allows us to reallocate the caster ability to another ability score.

So with that knowledge what works really well with it.

A binder can gesalt with just about anyone, but if you want the most bang for your buck, a class that is focused on charisma is always good (sorceress and such), though they can make spectacular skill monkeys when gesalt with another skill monkey

Well as stated we can change the CHA requirement to any other ability score we want including but not limited too Wis and Int.

In that case, factorum , win all the skill checks ever. Ever

This is always the correct answer, even when the correct answer is archivist.

Class X + Factotum = "like class X, except breaking the action economy."

The question of what would be a good gestalt combination with a Binder is difficult to answer, since Binder itself is such a flexible class. It can do a bit of everything, so it helps if you can narrow down what you want to accomplish with the class.
Even without factoring in Lost Traditions, I think it would be a decent idea to choose a caster class with a Charisma focus. Bard, Sha'ir, Sorcerer, Shugenja, Favored Soul can all work to varying degrees. You might instead be more inclined to a martial bent and would prefer classes like Crusader or Paladin.
