So in a game I play in we use the variant rule that psionics and magic are "different" IE detect magic won't pick up psionics, spell resistance has no affect on psionic powers, magic works in an anti-psionic field, and viceversa + etc.

Now lets say you somehow end up as a golem with either immunity to all spells as in the monster manual, or as the psion-killer with complete psionic immunity, if you then took a level or ardent and choose the magic mantle as one of your starting mantles you should be immune to both spells and powers that allowed their respective resistances? Probably with the Psion-Killer being the superior choice since it doesn't have the 1 or 2 spell vulnerabilities like the MM golems do.

Yes, that should work.

Doing it with a Shadesteel Golem is your best choice.
