I am looking for a creature that is like the "Mist Wraith" from the mistborn series.

Basically a creature that walks around and uses assorted bodies to form its own body. But are docile unless provoked. If there is none like it (aside from the cadaver collector) then ill make my own.

Isn't that similar to a mohrg, except for the docile part?

I thought mohrgs were basically insanely powerful zombies that were murderers in their life.

I might have got them confused, but thought there was a variety of undead something that was actually composed of swarms of maggots or something similar.

There are swarm undead in Libris Mortis like a Swarm of Undead Parts.

Homebrew monsters

Our DM does it all the time, it's annoying, scary, and man is it exhilarating.

Yeah, homebrew something, that's a great idea.
I think my DM does it, and i do it also in the Campaign that i DM. I'm having my players encounter the monsters from the 'monster hunter' games, and for stats i have a look at monsters with a challenge rating that i want mine to have. They already encountered the great jaggi, but sadly made a choice that doesn't bring them to the diablos. But sadly for them, this gave a necromancer the chance to find the diablos, meaning Undead diablos time!
