Corruption is as easy as 1, 2, 3

1, Sex
2, Drugs
3, Rock and roll

Seriously though, love is the best method of corruption.

The mindrape spell. Probably tops the list of worst things you can do and lets you change someone's alignment.

Fiendish Codex II has Faustian pacts, which bump people over to lawful evil. From Fiendish Codex I comes Pazuzu Pazuzu Pazuzu, who grants wishes to anyone not of chaotic evil alignment, at the cost of moving them first towards chaos then evil.

Not exactly on topic, but there's always the good 'ole Helm of Opposite Alignment, if you can make them fail the save...
Help of Opposite Alignment? :P

The rules for using diplomacy to move someone toward good in BoED can easily be adapted to any of the other 3 alignments.

Beyond that you only have a number of magical options like mind-rape, atonement, helm of opposite alignment, etc.
