Let's say that your party is battling someone and the ninja has previously used a vanishing trick and the next turn is standing behind his opponent. Can you use the ki point for an extra attack and attack twice with sneak attack, or is only the first attack considered a sneak attack, and the second a normal attack?

Sadly this works like Invisibility and you do not get additional Sneak Attacks after your first one. You can make the additional attack but it won't deliver SA.

Typically only the first attack would be a SA, since it would break your invis. However, you might still get extra SA if you meet any of the other SA conditions. If you have the Invisible Blade talent/trick, your invis is actually greater invis and does not break when you attack. If you use invis to move into flanking, then even if you're not invis you can still SA. If someone else in the party has an ability that can make the opponent flat-footed to you, then even if you're not invis you can still SA. If you have the Hunter's Surprise talent, you can designate that opponent and get SA on all your attacks for one round. If you (and an ally) have the Gang Up teamwork feat, and the ally is threatening your desired target, you get flanking and can get SA on all your attacks. If you have 3 levels of Inquisitor, you get Solo Tactics, and your allies don't need the teamwork feats (although they wouldn't get the benefit if they don't, you still would as if they did have it).
