Defensive Stance: When he adopts a defensive stance, a defender gains phenomenal strength and durability, but he cannot move from the spot he is defending.

Its actually quite simple, does this limit the dwarven defender to a single 5 by 5 feet square, or can it be interpreted as choosing the back of a horse as your spot.

if the latter is impossible, say you fight on the back of Gargatuan creature that is moving 20 feet per round, can you then choose a spot on the back of the creature? what is the logic behind choosing a spot?

This is taken from the foreign ruleset of Pathfinder but:

While in a defensive stance, a stalwart defender cannot willingly move from his current position through any means (including normal movement, riding a mount, teleportation, or willingly allowing allies to carry him). If he enters a defensive stance while on a moving vehicle he does not control (such as a wagon or ship), he can maintain the stance even if the vehicle moves. If the stalwart defender moves under his own power as a result of an enemy's successful use of the Bluff skill or an enchantment spell, his stance ends.

Just checking, but you are aware that Dndwiki does not always have the correct rules for things, right? The d20 Hypertext SRD ("http://www.d20srd.org/srd/prestigeClasses/dwarvenDefender.htm) is miles better.

Also, I'm fairly certain that riding a horse counts as moving from your spot.

Yes because you are the rider.

If any motion would break the stance, the stance wouldn't be able to be held. Your character moves to defend himself. Your tectonic plate moves on the planet's surface. The planet moves around its central star. (I know I'm nitpicky :)). So anything you directly influence should count.

It doesn't say a 5' square. It would seem that you would be fine on a gargantuan mount provided that the mount didn't move.
