If I have a level 20 sorcerer who knows summon monster ix and then prestige for 3 or more levels in demonologist, that would mean that my spell summon monster ix will be a summon monster xi, xii, or xiii. What would be on those lists?

1d3 from XI and 1d4+1 from XI for the 10 and 11th level versions.

12th level... I don't know, apply metamagic to 8 and summon 1d4+1 Barbed Devils.

Assuming a DM let it count as XI (3 levels of demonologist giving you +2) it'd be up to the DM to add the options or else you'd just need to summon multiple monsters (SMIII or higher lets you summon 1d4+1 creatures from a list 2 below it). This would mean that a 9th level demonologist/14th+ level sorcerer could summon 1d4+1 Lv 9 creautres with SMVII; and that a non-epic wizard 11/demonologist 9 could summon 1d3 SMIX creatures with SMVI (although it'd be better to go Wizard 17/demonologist 3 and get 1d4+1 with SMIX).

If you're asking as a DM what creatures would fit to add to the list. I'd look over demons for some CR 13 (maybe 14) for SMX (glabrezu), CR 14 or maybe 15 for SMXI (nalfeshnee), CR 16 or 17 for SMXII (marilith), and maybe as high as CR 20 for SMXIII (balor). This is a quick little attempt, and probably needs a little more consideration. Again this is just a quick idea for a non-gestalt game where a DM might want to expand it for epic levels.
