When do the +1 come? I'm always having trouble figuring this out on spells that say for every X level or something like that.

Would it be 1d6 at level 1, 1d6 +1 at level 3, 1d6+2 at level 5 ?

Would it be 1d6 at level 1, 1d6 +1 at level 2, 1d6+2 at level 4 ?

caster level 1: 1d6
caster level 2: 1d6+1
caster level 3: 1d6+1
caster level 4: 1d6+2
caster level 5: 1d6+2
caster level 6: 1d6+3
caster level 7: 1d6+3
caster level 8: 1d6+4
caster level 9: 1d6+4
caster level 10:1d6+5
all higher caster level: 1d6+5

you basically divined your caster level by 2, round down to determine the bonus, max 5

The general rule in D&D is round down, unless otherwise indicated.

1d6+0 at level 1 (CL 1/2 = .5, rounded down = 0)
1d6 +1 at level 3 (CL 3/2 = 1.5, rounded down = 1)
etc.

Then Acid Arrow would always last a minimum of 2 rounds? to a maximum of 7 rounds (1+6) at level 18?

The arrow deals 2d4 points of acid damage with no splash damage. For every three caster levels (to a maximum of 18th), the acid, unless somehow neutralized, lasts for another round, dealing another 2d4 points of damage in that round.

As bolded.
You normally round down, unless the spell says otherwise — which it doesn't.

The spell always does the 2d4 on the round it is cast. Then divide your caster level by 3, rounded down to determine how many rounds after that the spells does another 2d4 damage that round (unless neutralise.)
so, 1 extra round for caster levels 3-5, 2 extra rounds for caster levels 6-7,…

Aye, it would.
