what classes have the best ones? Like per level if you were to gestalt two for just cool class features or something.

A class is basically just a chassis (BAB, Saves, Hit Dice, Skills) and class features. The best class features are spells. Is that what you're asking?

No like bonus's the class gets like the monk gets new features at every level (although the monk is not good) cool and unique stuff that the person just gets as a thing they can do all the time. Spellcasters do not count.

So you're asking what 2 classes we would gestalt for cool factor of class features? Probably something like Hexblade//Duskblade. Maybe Knight//Paladin. Druid or Ranger on one side and Paladin on the other would be great for an ubermount.
