Could you run a star wars game in pf?
I could see jedi builds being psywarrior//soulknife for knight psion//soulblade for councilor(sp?)

But how would you do a stormtrooper or other enemies?

How would you do it?

Stormtroopers are easy.
Drop DEX to 7, 1 level of Commoner. Sadly, pretty much NONE of the 'official allowed as playable' races have a DEX penalty, so a 7 will have to do.

OH! Better idea!
Drop CHA to 7 as well, and put the level in Dual-Cursed Oracle. For Curses take Clouded Vision, and Blackened.
Your level 1 attack "bonus" would be -6 = 0 Bab -2 DEX -4 Blackened AND you can only see within 30ft.

Eh, wouldn't it be better to simply play Star Wars d20?

Devil's Advocate:
Maybe he already has all the PF books, but doesn't have any Star Wars books.
Maybe his group is already acquainted with PF, and switching systems, however how similar, would require 'learning time'.
Maybe it's for a one shot, or a short campaign, just for funsies.

Hmmm, point taken. Might pay off to go the extra mile, anyways.
