Let's say I wanted to role play a wise wizard, are there any mechanical set ups or builds for the wizard class that could help benefit from a high wisdom score?

Does Zen Archery apply to ranged touch attacks?

You could take the Keen Intellect feat (1st level only feat) to use Intelligence instead of Wisdom for Will saves, as well as Heal, Sense Motive, Spot and Survival checks.

That way you are better at things Wisdom usually does for you.

Play an Archivist and call yourself a "wizard".

The feat Lost Tradition from Green Ronin's Bastards & Bloodlines would allow you to change the Wizard's casting stat to Wis.
