Can you use the spell major creation to create bows and arrows?

Generally I play with the rule that you use the Craft skill to create anything with a high DC. Other than that, they last for 1 H/L, can't be used as material components, and all of the other standard caveats.

This is for an absolute last resort type of thing, so like if the party escapes from some prison with no equipment, can a wizard with eschewed materials feat create bows and arrows out of nothing? I know they can with swords and such because they are uniformly made of iron, but bow and arrows are a mix of wood and iron, but I guess the answer is yes.

What swords are you referring to? They're generally made out of the following:

steel (a mixture of iron, carbon, and trace minerals) for the blade and crosspiece
wood grip (this holds the crosspiece in place)
brass rivets affix the grip to the blade; also solder, to attach an (optional) pommel
leather wrapped around the grip

Minor/Major Creation says nothing about being a single substance. You might be thinking of Fabricate?

An incidentally, because Ironwood / Bronzewood is a thing, most weapons (and some armor) can in fact be made with Minor Creation.
