I've looked and looked and a thing that caught my eye was symbiotic creature. Fusing an evil caster with a big brute was a big idea for me, and I wanted to make this a big thing for when my PCs fight it.

My idea was to apply Half-Fey to the Tarrasque, then give it Greenbound to turn it into a plant and thus allow the symbiotic creature. Inbetween that somewhere I would give it some other templates and fuse my evil caster on top, focused on healing and buffing.

What other, better hosts would serve as a better creature? And what caster should I provide for it?

What level do you want your party to be when they fight this? There's only one Tarrasque, and there are better ways of making it a suitable challenge (http://www.giantitp.com/forums/showthread.php?343568-TO-Monsters/page2#34).

I'd use an advanced (huge) Fleshraker Dinosaur (MM3) as the Host, add Topiary Guardian (MM3) if you want it to be a plant, and a Killoren (RotW) Spirit Shaman (CD) or Druid for the Guest. Use the Deadly Hunter (http://www.d20srd.org/srd/variant/classes/variantCharacterClasses.htm#druid) and Druidic Avenger (http://www.d20srd.org/srd/variant/classes/variantCharacterClasses.htm#druidVariantDruidicAve nger) variants from UA if using Druid.
