Was there ever an official floor plan or layout for the Airships you can buy from the Eberron Campaign setting? If so, could someone point me in the right direction to it?

The Explorer's Handbook had a layout for at least one ship (a wind galleon, I think. Not a flying ship, but it was an elemental ship that probably could suffice in a pinch.) I also think the adventure Voyage of the Golden Dragon had some more in-depth maps of the Golden Dragon, though that was almost a luxury ship, possibly not the most common thing you'd find in adventure games.

EDIT: Yep, Golden Dragon definitely has a map. And page 32 of Explorer's Handbook has a layout of a common Airship ("The Beginner's Luck"), in addition to the books other maps of storm galleons, lightning rail coaches and the like.
