So I'm persisting this spell on a daily bases and I have kind of a goofy question. Since I have the ability to fly(good) is it possible to fight a character while hovering about 3-5 feet in the air to avoid trip attacks and still get my own attacks in? One of the npc's we keep fighting is an evil lockdown crusader and I'd rather avoid all the dang trip attacks he makes while hitting him with my own sword.

Flying does not prevent being tripped. (https://www.wizards.com/default.asp?x=dnd/rg/20040706a) If someone succeeds on a trip attack against you, you will stall and start falling.

However "creatures that don't rely on their limbs to fly cannot be tripped when in flight"

Also having Good maneuverability does give you a +8 on Trip checks.

Normally there is a minimum forward speed. However Good maneuverability does not have a minimum forward speed so you are free to hover.

I finished editing my post after you read it. Since your flight is not based on limbs, you are immune to trip.
