So, one of the players in my game is about to hit her 4th level of ranger, and for her animal companion, she wants a squirrel.

Should I just sit down and make up stats, or are there any existing stat blocks for a squirrel (or similar creature) out there already?

While not official, I believe Gamebird came up with stats for animals not already in the MM, including the squirrel.

Edit: Found it! It is in Homebrew forum.

Base Attack/Grapple:
+0/–12

Bite +4 melee (1d3–4)
Full Attack:
Bite +4 melee (1d3–4)

These rodents thrive almost anywhere there are trees.
Combat
Squirrels usually run away. They bite only as a last resort.
Skills: Squirrels have a +4 racial bonus on Hide checks and a +8 racial bonus on Balance and Climb checks. A squirrel can always choose to take 10 on Climb checks, even if rushed or threatened. A squirrel uses its Dexterity modifier instead of its Strength modifier for Climb checks.

Try a Rat, or in the case of an animal companion, a Dire Rat.
I think they're both rodents, and they're similiar size (I assume you're not talking of a flying Squirrel).

Note that climb speed is faster than regular move speed. ZOOOOOOM......

I just modified the Dire Rat a bit, climb instead of swim as memory serves.
