Does a mental spell attack affect someone on the other side of a Wall of Force? Would someone be able to use shadow conjuration to create a lesser orb of acid at someone on the other side?

Please define what you mean by this. Are you talking about an enchantment spell?

Enchantment spells need line of effect to hit their target at a distance. Wall of force blocks line of effect (and spells!) so it would stop you from hitting them with an enchantment spell.

A wall of force breaks line of effect and specifically stops spells from passing through it. Don't ignore the first line of the spell. "A wall of force spell creates an invisible wall of force."

It stops pretty much everything imaginable that isn't on its specific list of things that it can't block (disintegrate, rod of cancellation, a sphere of annihilation, mage’s disjunction).

A lesser sphere of acid would be blocked by the wall. A flask of acid would be blocked by the spell. An acid based evocation based spell would be blocked by the wall.

As an aside, are there any spells or Su abilities that require only line of sight?

Shadow Conjuration is not a mind-affecting spell, it's not a 'mental spell attack' at all. It's a solid object formed from what makes up the Plane of Shadow. "Illusion spells deceive the senses or minds of others (http://www.d20srd.org/srd/magicOverview/spellDescriptions.htm#illusion)." It deceives the senses, but not the minds.
