How can a Wild Shaped druid attack, say, a ghost without relying on the druid spell list (say he just wants to whack it, not rain lightning on it) are there forms which allow this? what other method is there?

Only way I know of is either buffing yourself with Magic Fang or using a Necklace of Natural Attacks.

Elvencraft Longbow (300 GP, Races of the Wild) made out of Serren (4000 GP, Book of Exalted Deeds). For "Kung Fu Panda On A Stick", add the Opposable property (+1 enhancement, Masters of the Wild).

Wear Gauntlets of Ghostfighting (4000 GP, MIC) or a Ghost Shroud (5000 GP, MIC).

Shape Soulmeld: Crystal Helm + Open Least Chakra: Crown.

Or maybe have someone paint your claws/teeth with Ghostwall Shellac (150 GP, Dungeonscape).
