If fred the goblin attacks me with a club, and I cast wings of cover as an immediate action, does he get an attack of opportunity on me? If he does then that really tones down the use fullness of this spell.

Except on a wand its still awesome.

Swift and immediate action spells don't provoke.

He does not. However, based on the wording of the spell, the goblin can choose not to attack you then. He can launch an attack at someone else, or move away, or do anything else it wants after you choose to cast the spell.
