SO.... Does the Starmantle spell, from BoED protect against natural weapons?

No, I think when an ability specifically mentions weapon attacks it refers to attacks with manufactured weapons, not those with natural weapons

No, natural weapons are still weapons and starmantle makes no distinction.

It was almost certainly intended to though.

Of course Monk fists also count as Manufactured weapons so it functions vs them regardless.

"A monk’s unarmed strike is treated both as a manufactured weapon and a natural weapon for the purpose of spells and effects that enhance or improve either manufactured weapons or natural weapons" Starmantle does not enhance or improve the monks unarmed strike. The unarmed strike does not count as a manufactured weapon for starmantle.

Starmantle says nothing about only functioning against manufactered weapons. Hence by RAW, would that not mean that natural weapons would be inclused in the list of things that the spell protected against?

Many natural weapons would be in a gray area. There's no game mechanic to deal with destruction of natural weapons, so if a DM decided Starmantle protected against claw attacks that DM would then have the job of creating a house rule to decide exactly what destroyed claws mean in game terms.

Unarmed strikes cannot be affected by Starmantle.
unarmed strike

A successful blow, typically dealing nonlethal damage, from a character attacking without weapons. An unarmed strike is officially classified as a natural weapon attack, but ─ by definition ─ does not use any weapons. Starmantle can only affect "any nonmagical weapon", and thus is harmless to an unarmed attacker.
