It has been done. The Rock is coming to 5th Edition. For simplicity sake, this is the needed stuff for how this works.

Human. Rogue 4/Barbarian 1
Entertainer/Actor
Strength: 18 Dex: 14 Con: 14: Int: 10 Wis: 10 Cha: 10
Using Stat buy w/ 5th Edition rules.

Needed Skill for Grappling
Athletics 10

Expertise: Athletics, Stealth
Cunning Action
Rage

Feat: Grappling

Enjoy your wrestler.

Only reason I'm human is for the feat at 1st level and to get my strength to 18 at fourth. Barbarian for unarmed defense to be a true wrestler.

I always felt like professional wrestlers should be Barbarian/Bards or Fighter/Bards. Give them Athletics, Acrobatics, Intimidation, and Performance. If you're Randy Savage, you get Slight of Hand (https://www.youtube.com/watch?v=8C4lK41SX-Q).

if i had to pick a wrestler to be a rogue, i'd go with eddie guerrero.

Taking it one step further up the chain, at fourth level the feat choice should be Tavern Brawler, to give you the d4 proficient unarmed strike, proficiency in improvised weapons (like steel chairs,) and the ability to initiate a grapple as a bonus action after punching the opponent.

Now, the Ultimate Warrior was a straight-up berserker barbarian.
