I know there are weapons that count as two or more weapons such as the Buckler Axe, which counts as a buckler and a hand axe. Are there any other such weapons?

Light & Heavy Shields count as shields and weapons both, even without shield spikes.
The Shikomi-Zue (OA) - Quarterstaff and spear. The Ninja-to (OA) - sword, club, blowgun. The various bayonets from CS - crossbow & dagger or spear iirc.

Monk unarmed strikes count as both natural and manufactured weapons. The sorcerer's hand crossbow in the Arms and Equipment Guide counts as both a crossbow and a casting focus.
