In 2e, beholders had different AC in their eyes, body and so on. I think its more fun to play with that, rather than hacking away at one like its a big piece of butter.

The beholder has different Armor Classes, this has been adjusted from AD&D 2e, for different parts of their body. Destroyed eyestalks (but not the central eye) can regenerate at a rate of one lost member per week. When attacking a beholder, determine the location of the attack before striking (as the various Armor Classes may make a strike in one area, and a miss in another):

Beholder, Eye Tyrant
01-75 Body 26 (hp 2/3 of total)
76-85 Central Eye 33 (hp 1/3 of total)
86-95 Eyestalk 34 (hp 4+1d8 over the total)
96-00 One smaller eye 33 (hp 4+1d8 over the total)

Gauth, Lesser Beholder
01-75 Body 19 (hp 2/3 of total)
76-85 Central Eye 26 (hp 1/3 of total)
91-00 Eyestalk/Tendril 27 (hp 6 over the total)
