How would this work? Would it retain the restrictions of the original servant, abysmal strength, dispersion(it isn't dead so wtf happens when dispersed), unable to attack, unable to save vs attacks?

the living spell template can only be applied to AoE spells. Unseen servant, consequently, doesn't qualify.

Actually, it can slo be applied to spells which create effects.However, it can't be applied to spells thats effects are creatures. I'd argue that clause is what prevents this, since the effect of Unseen Servant is a creature (albiet, one with a lot of special rules). If you think the resulting Unseen Servant isn't a creature, than it works.

It never specifies that it creates a creature, it is just a spell effect that has some abilities of a creature. But the question is how many of the restrictions are overridden or altered by the template? It looks like it has a Str of 11 and an effective Str of 2, speed 20ft(yay 5ft more), it is still commandable, still can't be killed, but can be dispersed the mechanics of which are not defined, it can use a slam attack 1/round... but can't make an attack roll. Even if the slam is allowed as an exception you still can't do any other attacks by default(grapple, bull rush, etc.). It gains blindsight with an undefined range(default 0?), it cannot leave the caster for fear of ceasing to exist, auto-fails saves vs attacks.
