What would be a fair trade for a Ranger in exchange for magical ability? Preferably something that trades away only spellcasting, and only gives (Ex) abilities, or at most continuous or at-will (Su) abilities.

I was thinking something along the lines of full animal companion progression plus a slayer talent at 3rd and every 3 levels thereafter; would that be enough, should I add more, or is it too much?

For context, I'm looking to recreate a certain Pixar character (http://m6.paperblog.com/i/41/416631/-L-ZvSn23.jpeg), and Ranger fits better than anything else, due to A) potential for being kickass at archery and B) animal companion (cuz Angus), but I don't want to have to include spellcasting when making a character that never uses any magic of her own.

The thing that most reminds me of what you're trying to do is the Skirmisher Ranger Archetype (http://www.d20pfsrd.com/classes/core-classes/ranger/archetypes/paizo---ranger-archetypes/skirmisher), which trades away casting for a wide number of swift- and free-action tricks that boost your allies or animal companion. It's got lots of neat stuff in there, and it gives a new ability every 2 levels past 5th.

I figure that would be a reasonable metric against which to measure your Slayer alternate progression plan.
