Alright, so I'm in a group that is level 7. I've chosen an LA+1 template. Would that make me level 5 or level 6 in technical, XP terms?

You would have six class levels. Your effective character level is seven. You earn XP and level up as a seventh level character.

6 class levels, 1 level from LA, unless you're allowing for LA buyoff.

If you have 6 character levels and 1 la you are a 7th level character EXP wise. 5 char and 1 la will make you ECL 6 and 6th level exp wise.
