Do size increases and resources that replicate size increases affect the damage that Eldritch claws deal? In terms of increasing the claw damage as a whole, and not just the unarmed aspect of them.

For example taking improved natural (claws) instead of (unarmed).

Nope. They deal damage equal to that of you eldritch blast, regardless of size (not including the unarmed strike portion). So while you could technically take INA for them, it wouldn't do anything. INA says it increases damage "as if the creature's size has increased by one size category", while eldritch claws doesn't have anything related to size in it (aside from the unarmed damage the claws do).
