I love a good portobello sandwich, and there's a new Italian restaurant which serves quite possibly the best grilled portobello I've ever had. They're a little family-run place, and while I'm happy to support them in principle, time and money mean I can't eat there as often as I'd like.

My experiments in cooking don't always go well, but if there's one thing I'd like to learn it's how to grill a portobello. Or bake one. Or however it's done.

So, how do you cook your portobellos? I'm looking for healthy, savory and reasonably quick, if all those can happen at once.

I tend to toss them on the BBQ (charcoal) after drizzling some olive oil and salt/pepper on them - pretty simple. The important thing is to not overcook, because it'll get limp and soggy; you want it to stay firm for the most part. The time of cooking depends on the temperature of the flames and the type of grill, but usually not more than 3-5 minutes, in my opinion.
