What would happen if somebody scored a critical hit with a vorpal sword against a Beholder (or Vargouille or some other creature that's basically just a floating head, but actually weak to crits)? =^0 ? 0^=

Regular critical hit.

I believe - though I could be mistaken - that Vorpal does specify that if the loss of a head is not fatal, then it doesn't kill the creature.

Cut off the Beholder's head, and you've basically nicked its underside.

Vorpal also in particular states that it severs the head from the body... if there isn't a body, then it doesn't do anything.
And it does specify that beheading doesn't kill all targets.

From the SRD
"Some creatures, such as many aberrations and all oozes, have no heads."

Beholders don't have a head, by definition a head is a projection from the main body that has sensory organs and generally contains the brain.

If a vorpal sword crits against a Beholder a giant headless body suddenly appears below it on the ground. No one knows where it comes from.

i would think with a Vargouille it would cut its wings off, but not kill it.

"With a single mighty swing, you chop the eyestalks from the beholder. To your surprise, they remain floating in the air as the main part of the body falls to the ground. They wriggle through the air and join together at their bases. They glare crossly at you.

This, by the way, is part of why vorpal suck. A ton of things are flat out immune to it, then a bunch of things are randomly immune to it, then it only works less than 1 out of 20 swings on average.
