So my DM and I are in opposition of what weapons my Zen Archer monk may use with Perfect Strike. I see nothing in the rules that states that the ZA may *only* use any type of bow (tho he does include crossbows as "it's got 'bow' in it's name, therefore it's a bow"; not a problem, i don't use 'em). He says that it doesn't sayit "adds" the bows to the list, but replaces the list with all types of bow. Who's right and why?

As far as I can tell, you are. the Zen archer says you gain Perfect Strike as a bonus feat. It also says you may use Perfect Strike with any bow. It says nothing about 'adding' but it also says nothing about 'replacing'. The only sensible interpretation is that you get the benefits of the feat as written and the ability to use it with bows, since one does not preclude the other.
