Hey there!

I am currently applying for an epic level campaign, where I'll start out at level 19 - due to the composition of the party (MoMF Druid Melee, Conj Wiz and CZilla) I intend to play a more casting focused druid. Now, I wonder what AC I would need for those kinds of level of play. With a Monk's Belt, Wild plate, a Wild Tower Shield, +4 dex item and the NA of most forms, I tend to clock in at ~40+AC - is that sufficient for epic levels?

Here's my sheet so far:

The plan is to stay away from actual brawls with a desmodu or storm elemental form, while summoning NA7+ and a Monolith, Throwing Fire seeds and maybe swooping in to use the elemental's abilities against mooks.
I can temporarily increase AC by 9 due to Owl's insight as well.

The other druid's battle form ac is 42, the cleric has 61, the wizard 47, they're level 20 atm.

There is no definite answer to your question.

The problem comes in that there are wide ranges of optimization... as you can see already from the examples you cite. A range of 42 to 61 already means that what will barely ever hit one character will always hit another (+41 attack bonus means a 95% chance to hit the druid and a 5% chance to hit the cleric). This only gets worse if you plan to actually use epic creatures, which have a stupidly wide range of attack bonuses. Behemoth Gorillas (http://www.d20srd.org/srd/epic/monsters/behemoth.htm) at CR 19 have +29 attack bonus. The Brachyurus (http://www.d20srd.org/srd/epic/monsters/brachyurus.htm) at CR 23 has +48. The Stone Colossus (http://www.d20srd.org/srd/epic/monsters/colossus.htm) at CR 24 has attack bonus +70. There are massive gaps between various creatures of close CR, and giant jumps between minor CR differences- if you fight premade epic creatures expect your AC to be either insufficient or over the top, and never anywhere in between.

In short, ask your DM, and really, really hope they know what they're actually doing.
