If there's a Paladin (or Paladin/Sorc) in a party with a EK, doesn't it make more sense for the Paladin to cast Elemental Weapon on the fighter's sword and for the fighter to cast Haste on the Paladin?

Yup, or both on one or the other depending on the situation at hand.

Assuming that the Eldritch Knight has Haste (it's not evocation or abjuration, so they'd have to use one of their few unlimited spells known on it), probably. Though the Haste would probably be better coming from the sorcerer who can twin it.
