Are there any spells that would summon not a monster, but a person?

I.e. summon one of the characters that reached level 20 in a class that changes their subtype to Outsider.
Or your deceased ancestor...

Calling spells can do exactly that. Your deceased ancestor is probably a petitioner, though, so their planar lock/attunement (forget exact name) ability would prevent them from being brought.

Normal summoning isn't that specific, because you summon more of a copy of a creature than an actual creature (thus why summoned creature reform after 24 hours if they are killed).

Calling spells are not Summoning. They lack a very, very important ability which you've highlighted below:

Which is exactly my desired effect - the rest of the party members sit at home and you summon them every battle, so that they don't risk dying and you get all the XP and loot in exchange.

You want Astral Projection. It does that. Not a summoning effect, technically, but gives the "does not die when killed" effect.
