If I cast true casting, then cast a 1 round casting time spell, or a 1minute casting time spell, do those spells receive the benefits of true casting?

It depends on what your interpretation of "if it is cast before the end of the next round" means. Does cast in this case mean begin casting, or finish casting? I think generally a spell is considered cast at the very end of the casting, when the spell comes into effect, since a spell that is interrupted is generally considered to have failed to cast. By that interpretation, no, it would not work.
