Advanced Gelatinous Cube
Size: Huge
HD: 16d10+144 (232 hp)
Initiative: -5
Speed: 15 ft
AC: 1, Touch 1, Flat 1)
BAB/Grab: +12/+20
Attack: Slam +10 (1d6+1d6 Acid)
Full Attack: Slam +10 (1d6+1d6 Acid)
Space/Reach: 15 ft/10 ft
Special Attacks: Acid, Engulf, Paralysis
Special Qualities: Blindsight 60’, Immune to Electricity, Ooze Traits, Transparent
Saves: F+13 R+0 W+0
Abilities: Str 10 Dex - Con 29 Int - Wis 1 Cha 1
Skills: -
Feats: -\
CR: 6

Acid (Ex)
A gelatinous cube’s acid does not harm metal or stone.
Engulf (Ex)
Although it moves slowly, a gelatinous cube can simply mow down Large or smaller creatures as a standard action. It cannot make a slam attack during a round in which it engulfs. The gelatinous cube merely has to move over the opponents, affecting as many as it can cover. Opponents can make opportunity attacks against the cube, but if they do so they are not entitled to a saving throw. Those who do not attempt attacks of opportunity must succeed on a DC 13 Reflex save or be engulfed; on a success, they are pushed back or aside (opponent’s choice) as the cube moves forward. Engulfed creatures are subject to the cube’s paralysis and acid, and are considered to be grappled and trapped within its body. The save DC is Strength-based and includes a +1 racial bonus.
Paralysis (Ex)
A gelatinous cube secretes an anesthetizing slime. A target hit by a cube’s melee or engulf attack must succeed on a DC 26 Fortitude save or be paralyzed for 3d6 rounds. The cube can automatically engulf a paralyzed opponent. The save DC is Constitution-based.
Transparent (Ex)
Gelatinous cubes are hard to see, even under ideal conditions, and it takes a DC 15 Spot check to notice one. Creatures who fail to notice a cube and walk into it are automatically engulfed.

Oozable Ideas:
The Summoning Ooze is just begging to be a BBEG, particularly an advanced 15HD version, or something with spellcaster levels + Thaumaturge or Malconvoker.

The best way to make oozes more interesting is give it a ranged attack (for example, the Bloodfire Ooze's Negative Energy Ray) or something that makes them stronger if you use the "wrong" attack. Arcane Ooze's Spell Siphon comes to mind, or any ooze with the Spellwarped template.

For a "Final Boss Fight", a Teratomorph could be pretty interesting, although it would be a little like fighting an epic-level nuclear-powered Rod of Wonder: "Ok, this round, the ranger grows three tentacles out of his left earlobe. The druid was plane-shifted to the elemental plane of candy. The rogue got polymorphed into a ham-flavored watermelon with abandonment issues. The barbarian is still stuck hip-deep in the mud on the ceiling, which is now the floor again, and oh yeah... the mud is also on fire. Everybody save vs. trombones."

The Zargon section of Elder Evils is sorta a mini-campaign with a heavy ooze theme.

Lastly, I would be remiss if I didn't mention Orthagonel Velodrake (http://www.giantitp.com/forums/showsinglepost.php?p=16886796&postcount=204) (although I should maybe fix those tables and post him somewhere else).

Also, for situations where you just want something quick and unusual, some 3.5 book points out the fact that Oozes can benefit from potions. So, if a gelatinous cube oozes its way through an alchemical lab and over a puddle that had previously been a jar of the Jump potion, or of Barkskin, or even of Light, you've got a more or less regular Gelatinous Cube that's a little different from the norm. (The Jump potion given to a cube in particular suggests a few moments of terror for players.)

Too bad there's no gelatinous sphere (or is there?) variant. (I'd imagine the difference being: really fast down a slope.)

Too bad there's no gelatinous sphere (or is there?) variant. (I'd imagine the difference being: really fast down a slope.)

Haste potion puddle at the top of a ramp?

I don't know if it was one of the DMGs, CScoundrel, or something else, but somewhere there are rules for chutes/slides that were a lot like falling damage where you could make a Tumble check to avoid (amount based on check).

I'm really confident there was something about how much distance a character would roll/slide/tumble depending on other details.
